LAS VEGAS -- Pork and sausages, developed by a Silicon Valley-based food tech company, are not served at any restaurant in the world, but they are unique enough to fascinate many visitors at CES, the world's largest tech fair.

At CES 2020 in Las Vegas, Impossible Foods, the developer of plant-based substitutes for meat, unveiled new meat products which are free of gluten, animal hormones and antibiotics but give people the taste and nutritional benefits of meat.

Impossible Foods' pork and sausages were certified as Kosher (Jewish dietary regulations) and halal (food permitted under Islamic law) but the taste is similar to real things. When cooked, juices come out just like real meat. Impossible Foods' sausages will soon go on sale at Burger King.

Impossible Foods CEO Pat Brown said that with the release of pork, his company aims to increase its market share in China and other Asian countries where pork is popular.

Impossible Foods selects specific proteins and nutrients from plants to recreate the experience and nutrition of specific meat products. The company launched its signature product, the Impossible Burger, in 2016. In January 2019, the company launched a new version of their signature burger, the Impossible Burger 2.0, saying it is tastier, juicier and more nutritious.

Impossible Foods discovered that heme is a key factor in how meat behaves. Heme is the molecule that gives blood its red color and helps carry oxygen in living organisms. It is abundant in animal muscle tissue. Plants, particularly nitrogen-fixing plants and legumes, also contain heme. The plant-based heme molecule is identical to the heme molecule found in meat.
